What you are actually trading

Lower and slower buys time. Collagen needs hours above 160 °F to turn to gelatin, and bark needs time to dry and set. A longer cook gives both more room, which is why 225 °F remains the default despite being the slowest option here.

Hotter buys your afternoon back. The time saved is real and the results can be excellent — but the margin for error shrinks. The window between probe-tender and dry gets shorter, and the outside can set long before the middle is ready.

Whatever you pick, the finish line does not move: 205 °F / 96 °C, pulled at 202 °F to allow for carryover.

Is 300 °F too hot?

No, and plenty of competition cooks run hot on purpose. What you lose is margin: at 300 °F the window between perfectly tender and dried out is narrower, and the bark sets before the inside is ready if you are not watching. It is the right call when you are short of time and wrong when you are short of attention.

Does the pit temperature change the internal target?

No. Done is done: 205 °F / 96 °C either way. What changes is how long it takes to get there and how much carryover you get afterwards — a hotter pit drives more residual heat into the meat, so you pull earlier.

How accurate is my smoker's dial?

Usually not very. Built-in lid thermometers commonly read 25–50 °F off the grate, and they measure the dome, not where the meat sits. Every number on this page assumes the temperature at the grate, which is the only one worth acting on.
