What resting actually does

Two things, both measurable. First, carryover finishes: the outer layers are hotter than the centre and keep pushing heat inward — that is the 7 °F climb this turkey does after it leaves the heat. Second, the juices stay in. As the meat cools the fibres relax and the liquid thickens, so far less of it runs onto the board when you cut.

You can see it without a thermometer: slice a steak straight off the grill and the board floods. Slice the same steak after ten minutes and it barely weeps.
