How Long to Rest a Prime Rib (Standing Rib Roast)
A 10 lb prime rib should rest about 40 min before slicing. Tent it loosely with foil, never sealed tight, or you steam the crust you just built.
Rest time by weight
| Weight | Rest time | Cook time (for scale) |
|---|---|---|
| 4 lb | 22 min | 2h 34m |
| 6 lb | 33 min | 3h 42m |
| 8 lb | 40 min | 4h 47m |
| 10 lb | 40 min | 5h 51m |
| 12 lb | 40 min | 6h 54m |
| 14 lb | 40 min | 7h 55m |
What resting actually does
Two things, both measurable. First, carryover finishes: the outer layers are hotter than the centre and keep pushing heat inward — that is the 5 °F climb this prime rib does after it leaves the heat. Second, the juices stay in. As the meat cools the fibres relax and the liquid thickens, so far less of it runs onto the board when you cut.
You can see it without a thermometer: slice a steak straight off the grill and the board floods. Slice the same steak after ten minutes and it barely weeps.
How to rest it properly
- Tent loosely with foil. Loosely — a sealed tent traps steam and turns the crust soft.
- On a warm plate, not a cold one. A cold plate pulls heat out of the bottom face.
- Do not cut early to "check". Every cut you make before the rest is finished lets juice out.

Frequently Asked Questions
How long should prime rib rest?
About 40 minutes for a 10 lb prime rib. Bigger cuts hold more heat and benefit from longer.
Does resting actually do anything, or is it a myth?
It does two measurable things. The temperature evens out, so the outer layers stop driving heat into the centre. And as the meat cools, the juices thicken and the muscle fibres relax, so far less liquid runs onto the board when you cut. Slice a steak straight off the grill and you can watch the difference pool on the plate.
Will it go cold?
No. A large cut loses only a few degrees over the first half hour — it has enormous thermal mass.
